Pancake day is so close I can taste it! So I thought I would share a ridiculously easy, healthy pancake recipe with you guys in preparation.
Theses pancakes are made from two key ingredients; bananas and eggs. That’s it!
Perfect combo of healthy fats, protein and carbs. The banana gives a gorgeous caramel taste and a fab texture.
To make about 4 mini pancakes all you need is…
- 1 really ripe banana
- 2 eggs
- a pinch of cinnamon
- and some extra fruit, or yogurt, or honey to serve with your yummy stack
If you think the list of ingredients is simple, the method is even easier!
Simply mash the banana into a paste. Add the cinnamon. Add the egg. And whizz it all together. Told you, easy peasy!!
Melt some butter or coconut oil into a pan and then keep the heat relatively low. Pour the mixture in creating several small, chunky pancakes. Flip once. Voila!
